Browned Butter Chocolate Chip Cookies
- 8 oz unsalted butter
- 2-4 ice cubes
- 12 oz Bread Flour
- 1 tsp kosher salt
- 1 tsp Baking Soda
- 2 oz granulated sugar
- 8 oz brown sugar
- 1 egg
- 1 egg yolk
- 2 tsp vanilla
- 5 oz walnuts toasted
- 10 oz chocolate chips (dark)
- Sea salt
- Place butter in saucepan over low-medium heat until browned and foaming subsides. Remove from heat and add 2-4 ice cubes it make 8 oz.
- While butter is browning, whisk flour, soda and salt and set aside.
- In bowl of stand mixer add sugars and browned butter and beat on high until pale and cool. Add eggs and vanilla. With mixer on low add flour mixture just until combined. Add chips and nuts.
- Cover directly with plastic wrap and refrigerate 24-48 hours.
- When ready to bake preheat oven to 325 degrees.
- Line baking sheets with parchment and scoop 2 oz balls onto sheets. Sprinkle with sea salt. Bake 16-18 minutes. Let cool completely on sheets. Cookies may appear to be underdone, but will finish cooking on baking sheets.
