Barbecued London Broil
- 2 to 2 1/2 lb. flank steak
- meat tenderizer (unseasoned)
- 3/4 c. canned tomato sauce
- 1/4 c. molasses
- 3 Tbsp. water
- 2 Tbsp. plus 1 tsp. vinegar
- 1 Tbsp. instant minced onion
- 1 Tbsp. Worcestershire sauce
- 1 1/2 tsp. prepared mustard
- 1 tsp. salt
- 1/8 tsp. pepper
- dash of cayenne pepper
- Treat meat with tenderizer according to jar directions.
- Mix remaining ingredients for sauce.
- Place flank steak on broiler pan without rack.
- Pour half the sauce over meat.
- Broil 5 minutes, basting once with sauce. Turn meat over.
- Broil 5 minutes more for rare; 7 for medium.
- Baste with remaining sauce. Cut into thin slices crosswise against grain on diagonal.
- Makes 6 servings.
