Three Cheese, Potato, Pine Nut & Arugula Pizza
- Pizza dough
- 3 oz goat cheese
- 2 tablespoons parmesan
- 2/3 cup ricotta
- 1 boiled red bliss potato
- 2 tablespoons toasted pine nuts
- 3/4 cup arugula
- 3 tablespoons olive oil
- 2 medium garlic cloves
- 1 pinch fleur de sel
- 1 tablespoon aged balsamic vinegar
- Preheat the oven to 450 degrees. Boil the potato and slice into thin pieces. Toast the pine nuts to taste. Spread pizza dough over a greased medium sized pan. Press garlic and mix into three tablespoons of olive oil. Spread two tablespoons of the mixture onto the dough. Spread the cheeses over the dough, distribute the potato slices evenly and drizzle the rest of the oil mixture over the potatoes. Bake for 18-20 minutes. Spread toasted pine nuts and arugula and drizzle the balsamic vinegar over the pizza to taste.
