Fried Butterflied Shrimp With Cheddar Goldfish Crust
- 2 Eggs
- 1 tablespoon Milk
- 1 teaspoon Hot sauce (Texas Pete/Tabasco/etc.)
- 1.5 pounds Peeled (and deveined if possible) raw shrimp
- 2 cups Cheddar Goldfish crackers
- .5 teaspoon Black pepper
- .5 teaspoon Garlic powder
- .5 teaspoon Onion powder
- Heat oil (high-temp, like peanut, grapeseed or canola) to 360 degrees.
- Beat together 2 eggs, a tablespoon of milk, and a teaspoon (or more) of hot pepper sauce.
- Fold in 1-1/2 lbs of peeled, raw shrimp and set aside.
- Crush 2 cups of Goldfish crackers to a fine powder in a food processor or blender.
- Blend in 1/2 teaspoon each of black pepper, garlic powder, and onion powder.
- Dredge each shrimp in the cracker mix until well coated and fry at 360 degrees for 2-3 minutes until golden.
