Fried Butterflied Shrimp With Cheddar Goldfish Crust

  1. Heat oil (high-temp, like peanut, grapeseed or canola) to 360 degrees.
  2. Beat together 2 eggs, a tablespoon of milk, and a teaspoon (or more) of hot pepper sauce.
  3. Fold in 1-1/2 lbs of peeled, raw shrimp and set aside.
  4. Crush 2 cups of Goldfish crackers to a fine powder in a food processor or blender.
  5. Blend in 1/2 teaspoon each of black pepper, garlic powder, and onion powder.
  6. Dredge each shrimp in the cracker mix until well coated and fry at 360 degrees for 2-3 minutes until golden.
