Shrimp Mozambique
- 1/4 cup olive oil
- 1/2 stick butter
- 1 finely chopped onion
- 3/4 can beer
- 3 tsp minced garlic
- 3 tsp crushed red pepper (wet - comes in a jar)
- 1 tsp parsley
- 7-10 drops tabasco sauce (or hot sauce)
- 2 packets azafran ( found in ethnic aisle)
- salt & pepper
- 24 medium shrimp
- In small bowl mix garlic, parsley, salt & pepper, tabasco sauce, red pepper, azafran - set aside.
- In large frying pan w/ cover, heat oil and butter.
- Add onion - cook 5 minutes on medium heat.
- Add beer and garlic mixture, cover and cook for 3 minutes.
- Add shrimp, cover and cook shrimp 3 minutes on each side (add more hot stuff if desired)
- Serve over yellow rice.
- Note: I use extra large shrimp.
- Can be made with chicken - very good.
