Arugula & Roasted Pepper Wrapped Mozzarella

  1. If you are going to make your own roasted peppers, put the peppers under the broiler of your oven turning until the skins are blistered and a bit burned on each side. Take them out and let sit in a covered bowl for ten minutes to loosen the skins and allow for handling. Peel the peppers, cut off the tops and remove the inner seeds.
  2. Laying your roasted pepper out flat like a sheet of paper, cut the pepper lengthwise making the width about and inch and a half to two inches (enough to wrap around the pepper). Place a couple leaves of arugula on each pepper and place the marinated mozzarella in the middle. Wrap the pepper and the arugula around the mozzarella and hold in place with a toothpick. Continue the process until you have the desired number of wrapped mozzarella balls. Arrange them on a nice plate for serving.
