Arugula & Roasted Pepper Wrapped Mozzarella
- 1 Large Container of Marinated Small Mozzarella Balls (or marinate your own batch of about 20)
- 3 Jars of Roasted Red Peppers (or roast your own 8 peppers)
- 1 Bag/Bunch of Arugula
- Salt & Pepper to Taste
- If you are going to make your own roasted peppers, put the peppers under the broiler of your oven turning until the skins are blistered and a bit burned on each side. Take them out and let sit in a covered bowl for ten minutes to loosen the skins and allow for handling. Peel the peppers, cut off the tops and remove the inner seeds.
- Laying your roasted pepper out flat like a sheet of paper, cut the pepper lengthwise making the width about and inch and a half to two inches (enough to wrap around the pepper). Place a couple leaves of arugula on each pepper and place the marinated mozzarella in the middle. Wrap the pepper and the arugula around the mozzarella and hold in place with a toothpick. Continue the process until you have the desired number of wrapped mozzarella balls. Arrange them on a nice plate for serving.
