Queen'S Chocolate Cake
- 2/3 c. semi-sweet chocolate morsels
- 2 Tbsp. dark rum
- 3 eggs, separated
- 1/4 tsp. cream of tartar
- dash of salt
- 2 Tbsp. sugar
- 1/2 c. butter, softened
- 2/3 c. sugar
- 1/3 c. ground almonds
- 1/4 tsp. almond extract
- 3/4 c. sifted cake flour
- Chocolate Butter Frosting
- 1/3 c. sliced almonds, toasted
- Place chocolate morsels in top of a double boiler; bring water to a boil.
- Reduce heat to low; cook, stirring occasionally, until chocolate melts.
- Remove from hot water; let cool completely. Stir in rum.
- Combine egg whites, cream of tartar and salt in a small mixing bowl; beat at medium speed of an electric mixer until foamy.
- Add 2 tablespoons sugar, 1 tablespoon at a time, beating at high speed until stiff peaks form.
- Cover; set aside.
