Broccoli Mushroom Quiche
- 1 deep pie shell (uncooked)
- egg white
- 1 c. grated Swiss cheese
- 1 c. grated sharp cheese
- 1 c. half and half
- 6 large mushrooms, sliced
- 1 (10 oz.) pkg. broccoli, drained
- dash of pepper
- 4 eggs
- 1/2 c. chopped onion
- 1/4 c. butter
- 2 Tbsp. parsley
- 1/2 tsp. salt
- 1/8 tsp. nutmeg
- Brush pie shell with egg white and refrigerate.
- Spread cheese in pie shell.
- In the butter, saute onion until tender.
- Add mushrooms and cook 5 minutes.
- Add broccoli, parsley, salt and pepper.
- Mix well.
- Remove from heat and pour in pie shell.
- Beat eggs; add half and half and nutmeg.
- Pour over vegetables and cheese in shell.
- Bake at 375u0b0 about 40 to 50 minutes, until golden brown and puffed.
