Jana'S Three Cheese Reuben Mac And Cheese
- shredded swiss, gruyere, and sharp white cheddar - or any 3 cheeses of your choice!
- butter
- flour
- milk
- salt/pepper
- brown mustard or russian dressing
- (for homemade dressing - mayo, grated onion w/ juice, dill relish, catsup, fresh dill, fresh parsley)
- topping:
- 2 slices rye bread toasted
- 1 tsp sweet paprika
- handful of flatleaf parsley chopped
- sauerkraut
- 4 thick slices corned beef
- macaroni noodles
- boil large pot of water for pasta
- shred cheeses
- in another pan melt 3 Tbs butter and 3 Tbs flour and whisk, add a couple cups of milk, salt/pepper to season, and mustard or dressing
- melt in 2/3 of the shredded cheese (about 2 cups)
- topping:
- toast buttered rye bread, add paprika and parsley, process to make crumble
- rinse kraut, squeeze and fluff
- cook pasta to al dente
- add kraut and sliced/chopped corned beef
- add cheese sauce
- place in casserole dish
- add toasted topping and remaining cheese
