Dale'S Mix And Match Cobb Salad
- Use equal parts of each ingredient, using the portion size and ingredients you desire, here is a suggestion:
- 1/2 head Iceberg Lettuce (optional)
- 1 Heirloom or Ugly Tomato
- 1/2 Cucumber
- 1/2 lb Chicken, Shrimp, or Black Forest Ham
- 1 Haas Avocado
- 2 Hard Boiled Eggs
- 1/4 cup Mushroom (canned or raw)
- 1/4 cup Artichoke Hearts
- 1/4 cup Roasted Red Peppers (drained)
- 1/2 cup Black Olives
- 1 pkg Crisp Crumbled Bacon (not Bits)
- 4 Scallions
- 4 oz Blue Cheese or Roquefert
- 12 oz Yogurt Blue Cheese Dressing
- Dice/cube all ingredients and serve on a large platter, using lettuce as a base (optional), then layer each ingredient, side by side, in strips. Sprinkle with Blue Cheese. Drizzle with dressing. Sprinkle on bacon. Garnish with scallions. Refrigerate for 15 minutes, to chill before serving. (Or use pre-chilled plates).
