Pumpkin Pie Cake
- Cake mixture
- 1 box yellow cake mix, (reserve 3/4 cup)
- 1 stick butter, melted
- 1 egg, lightly beaten
- Pumpkin mixture
- 1 large can pumpkin
- 3 eggs, lightly beaten
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/3 cup evaporated milk
- 1 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp ground cloves
- 3/4 cup cake mix
- 1/2 cup white sugar
- 1/4 cup butter
- 1 cup walnuts chopped
- Grease and flour a 9 x 13 glass dish. Blend the butter and egg into the cake mix and press into the dish. Use a cup or glass to press this mixture evenly into the bottom of the dish and half way up the side.
- Hand mix the pumpkin, eggs, sugars, milk and seasonings. Pour over the cake mix "pie shell".
- Blend the reserved cake mix with sugar and butter. Roll into walnut-sized balls and spread over the pumpkin mixture. Sprinkle with nuts.
- Bake at 350 degrees for 45 minutes.
- Serve with whipped topping.
