Venison-Bacon Blue Cheese Burger
- 1 lb Venison
- 1 egg
- 6 slices of Hicory smoked bacon
- 1/2 lb of Blue Cheese
- Sliced tomato
- Arugla
- Soft Bakery roll
- Sauce
- 1/2 tablespoon olive oil
- 1/2 finely chopped onion
- 1 cup tomato ketchup
- 1/4 cup balsamic vinegar
- 1/8 cup honey
- 1/2 teaspoon liquid hickory smoke
- 1 tablespoons Worcestershire sauce
- 1 teaspoon chili powder
- 1 teaspoon curry powder
- 1/4 teaspoon tabasco
- Prepare the Sauce by heating the olive oil on low heat and cook the onion until clear. add the remainder of the sauce ingredients and simmer covered for 1/2 hour.
- Fry the bacon until it starts to become crispy.
- Chop bacon into fine peices and mix with the venison, add egg and mix well.
- Separate the venison into 3 equal balls and form 3 burgers Place on a hot barbecue, brush on sauce, and flip after 5 min and cook for an additional 2 min top with blue cheese and cook until done (2-5 min).
- Place on bun and top with tomato and arugula
