Vegetarian Huevos Rancheros Casserole
- olive oil
- 1 yellow onion, chopped
- 1 tblsp. garlic, chopped
- peppers, chopped (I used about 1/4 each of a yellow, orange and red pepper)
- tomato, chopped (I used about 1/4 c quartered grape tomatoes because that is what I had in the fridge)
- 1 can black beans, rinsed & drained
- 4 eggs
- milk (for scrambled eggs)
- 4 tortillas (flour)
- 1 c. tomatillo salsa verde
- 1/4-1/2 c. Hatch enchilada sauce
- cheese, cheddar or monterey jack
- Mexican oregano
- salt and pepper, to taste
- cooking spray
- 9x13 baking dish
- Preheat oven to 450
- Saute onions, garlic, peppers and tomato, season to liking.
- Add black beans
- Scramble eggs and add to onion, pepper mixture.
- spray baking dish with cooking spray
- spread tomatillo sauce on bottom of pan. Place 2 tortillas on bottom, spread egg, beans, pepper mixture over tortillas. Cover with cheese (to your liking) and spread with more tomatillo sauce, cover with 2 tortillas, enchilada sauce and sprinkle with cheese.
- Bake for 20 minutes or until bubbly.
