Apple Slaw
- Prepare the slaw:
- 1 medium head of white cabbage, shredded
- 1/2 red onion, julienne, or a sweet onion (leave out if not in season)
- 2 large apples of your choice, preferably sweet; julienne or cut into french fry size
- 1-1/2 teaspoons of celery seed
- 1/2 cup of sliced almonds
- 1/2 cup of cranraisins or raisins
- 1 teaspoon of honey
- Vinaigrette: 1 tablespoon Dijon mustard
- 1/4 cup apple cider vinegar
- 1 large shallot
- 3/4 cup extra virgin olive oil
- 1 teaspoon honey
- 1/2 teaspoon salt (may leave out if salt sensitive)
- Mince shallot and place in small bowl with vinegar, mustard, salt and honey. Whisk in the olive oil.
- Chop the rest of the vegetables and place in a large salad bowl.
- Dress the cabbage and apples with the vinaigrette. Add the celery seed, cranraisins, sliced almonds and toss.
- For added flavor add a few sprays of any balsamic or raspberry flavored salad spritzer.
- Allow to set in the refrigerator for 30 minutes before serving
