Summer Soltice Salad
- 1 lb small shell pasta,cooked
- 1 15 oz can mandarin oranges
- 1 small can pineapple tidbits
- 1 med garden cucumber peeled and diced
- 1 bunch green onions, chopped
- 1 c salad dressing
- 1/4 c white vinegar
- 1/2 c white sugar
- Cook pasta in a 6 qt pot of boiling salted water untill al dente. drain in a colander and rinse with cold water. place cooked ,cooled pasta in a large bowl.
- While the pasta is cooking drain the mandarin oranges and the pineapple tidbits, Let sit in colander while making sauce.
- In a small bowl combine the salad dressing,vinegar and sugar and mix wtih a spoon till ingredients are well blended.
- Peel cucumber and dice and add to pasta bowl
- Clean and chop the green onion and add to pasta bowl.
- Add the drained fruit to pasta bowl.
- Pour sauce over pasta and toss gently.
- place the salad in to a serving dish and keeep chilled till ready to serve .
