Chicken Fricassee
- 3 lb. chicken, cut up
- 2 Tbsp. goya sofrito or 1 pkg. goya sazon
- 2 Tbsp. oil
- 1 tsp. dried oregano
- 6 cloves garlic, chopped
- 2 Tbsp. adobo seasoning
- 2 green peppers or 1 green and 1 red, coarsely chopped
- 1 onion, coarsely chopped
- 4 sprigs cilantro, chopped
- 1 c. white wine or chicken broth
- 2 to 3 Tbsp. tomato sauce
- 4 potatoes, quartered
- 3 carrots, sliced
- Heat oil and goya sofrito.
- Rub chicken with garlic, oregano and adobo.
- Saute chicken in oil until browned.
- Add peppers, onion, cilantro, tomato sauce and wine.
- Simmer 5 minutes, then add potatoes and carrots.
- Cook until chicken is done and vegetables are soft, about 1 hour.
- Periodically check liquid level and add a little water, if necessary.
- Serve with white rice.
