Chicken Fricassee

  1. Heat oil and goya sofrito.
  2. Rub chicken with garlic, oregano and adobo.
  3. Saute chicken in oil until browned.
  4. Add peppers, onion, cilantro, tomato sauce and wine.
  5. Simmer 5 minutes, then add potatoes and carrots.
  6. Cook until chicken is done and vegetables are soft, about 1 hour.
  7. Periodically check liquid level and add a little water, if necessary.
  8. Serve with white rice.
