Traditional Volt Turkey Gravey

  1. Ladle about 1 cup of Turkey stock into a medium bowl.
  2. Add the cornstarch and whisk until smooth to make a slurry.
  3. Then whisk the slurry back into the stock.
  4. Add the turkey heart and gizzard.
  5. Using an immersion blender or a regular blender, process the mixture until completely smooth.
  6. Begin adding the butter a little at a time, incorporating it until smooth.
  7. Taste and adjust the seasonings with kosher salt and pepper.
  8. Transfer the gravy to a saucepan and keep warm until ready to serve (or put into thermos if you don't have enough burners).
  9. When ready, transfer to a serving dish and garnish with chopped chives.
