LeilaS Spicy, Sage Boiled Potatoes
- Potatoes (any kind, 1-2 potatoes per person)
- 2 T Organic Chicken "Better Than Bouillon"
- 2 C. Tomato juice
- 4 Crushed, whole garlic cloves
- 10 Whole, fresh Sage leaves, stems removed
- 2 T. Vegetable oil
- 2 tsp Salt
- Texas Pete hot sauce
- Butter
- Bias-sliced scallions
- S&P to taste
- Peel the potatoes and cut width-wise to make 3/4" discs. Place them in a pot and fill with water to just cover potatoes. Stir in bouillon, tomato juice, enough to flavor and color the water (use more if you think you need more). Add oil, garlic and sage. Salt the water. Bring to a boil and remove from heat when the potatoes are fork tender.
- Serve the potatoes with a slotted spoon and drizzle a little broth over them (avoid the sage leaves). Shake the hot sauce over them, add a dollop of butter and sprinkle the top with green onions and salt and pepper. Serve nice and hot.
