Meatball Soup
- 1 beaten egg
- 1/2 c. soft bread crumbs (2/3 slice)
- 2 Tbsp. grated Parmesan or Romano cheese
- 1 Tbsp. snipped fresh parsley
- 1 c. chopped onion
- 1/4 tsp. garlic salt
- 1/8 tsp. pepper
- 1/4 c. tiny bow tie pasta or ditalini
- 1/2 lb. ground beef
- 1 (15 oz.) can garbanzo beans, rinsed and drained
- 1 (14 1/2 oz.) can beef broth
- 1 (14 1/2 oz.) can Italian Style stewed tomatoes
- 1 1/2 c. water
- 1 c. sliced fresh mushrooms
- 1 tsp. dried Italian seasoning, crushed
- 3 c. torn spinach or 1/2 (10 oz.) pkg. frozen chopped spinach, thawed and well drained.
- This is a full-flavored Italian specialty featuring pasta, garbanzo beans and spinach.
