Ken'S Faux Tagine
- 1 large sweet potato, cubed
- 1 medium butternut squash cubed
- 1/2 onion, halved lengthwise, cut into crescents
- 1 yellow pepper, cut into squares
- 1 cup green beans cut into 2 in pieces
- 1/2 cup raisins
- 1/2 cup figs, diced
- 1 cup chicken stock
- zataar (or sumac)
- Cinnamon
- curry
- Cumin
- green chili powder
- Pomegranate molasses
- Olive oil
- Lemon olive oil and or lemon juice
- Mix spices, molasses and oil in a large bowl
- heat oil in a dutch oven over medium high heat.
- cook onions til starting to brown
- add potato and squash
- try to get some browning on some of the surfaces.
- Add beans
- add raisins, figs and peppers, cook for a bit more then tip into oil/spice mix toss to coat.
- Put back in pot. Add stock. deglaze. cover and put in 350 deg oven til done
