Cold Oriental Noodles With Peanut Sauce
- spaghetti
- seasame oil
- peanut butter
- tamari soy sauce
- Chinese rice wine
- Chinese rice vinegar
- brown sugar
- garlic cloves
- red pepper flakes
- vegetables
- 1. Cook 1lb spaghetti, al dente (rinse under cold water)
- 2. Mix spaghetti with 2tbsp seasame oil (best to do with your hands so each noodle is coated)
- 3. In a bowl, mix together:
- a. 2 more tbsp seasame oil
- b. 1/2 cup natural-style peanut butter (I like the crunchy kind but creamy is OK too)
- c. 1/3 cup tamari soy sauce
- d. 3 tbsp Chinese rice wine
- e. 1 tbsp water
- f. 1 and 1/2 tbsp rice vinegar
- g. 1 tbsp vegetable oil
- h. 1 tbsp light brown sugar
- i. 1 tsp fresh minced ginger (I usually put in more)
- j. 3 garlic cloves, minced
- k. 1/2 tsp crushed red pepper flakes (or to your taste)
- 4. Dump spaghetti in with the peanut sauce (mix around with some tongs)
- 5. Add sliced vegetables (we usually put in cucumbers, red pepper, and scallions). Carrots might also be good.
