Cold Oriental Noodles With Peanut Sauce

  1. 1. Cook 1lb spaghetti, al dente (rinse under cold water)
  2. 2. Mix spaghetti with 2tbsp seasame oil (best to do with your hands so each noodle is coated)
  3. 3. In a bowl, mix together:
  4. a. 2 more tbsp seasame oil
  5. b. 1/2 cup natural-style peanut butter (I like the crunchy kind but creamy is OK too)
  6. c. 1/3 cup tamari soy sauce
  7. d. 3 tbsp Chinese rice wine
  8. e. 1 tbsp water
  9. f. 1 and 1/2 tbsp rice vinegar
  10. g. 1 tbsp vegetable oil
  11. h. 1 tbsp light brown sugar
  12. i. 1 tsp fresh minced ginger (I usually put in more)
  13. j. 3 garlic cloves, minced
  14. k. 1/2 tsp crushed red pepper flakes (or to your taste)
  15. 4. Dump spaghetti in with the peanut sauce (mix around with some tongs)
  16. 5. Add sliced vegetables (we usually put in cucumbers, red pepper, and scallions). Carrots might also be good.
