Zucchini Bread
- 1 1/4 C Flour
- 1/3 C rolled Oats
- 1/2 tsp Salt
- 1 1/4 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1/4 tsp ground Nutmeg
- 1/4 tsp ground Cloves
- 1/2 tsp ground Cinnamon
- 1/2 C white Sugar
- 1/2 C brown Sugar
- 1/2 C Applesauce
- 1 small Apple, chopped
- 1 1/2 TBS vegetable Oil
- 2 Eggs
- 1 medium Zucchini, shredded
- 1/2 tsp Lemon Juice
- 1/2 tsp Orange Zest
- 1/2 tsp Vanilla
- water
- 1/2 C chopped Nuts
- Preheat Oven to 350F (or 325F Convection).
- Mix first section of ingredients, set aside. Mix second section (minus nuts) of ingredients in separate bowl. Pour into dry ingredients and stir until well mixed. Add water a teaspoon at a time to achieve desired consistency (only needed if your fruit isn't juicy enough). Add nuts.
- Spray a bread pan with nonstick baking spray. Pour mixture into pan.
- Bake for 1 hr (45min if using convection). Check 10min before done with a toothpick. If it comes out clean, bread is done.
- Remove from oven and let cool in pan for 10 min before removing from pan.
