Zucchini Bread

  1. Preheat Oven to 350F (or 325F Convection).
  2. Mix first section of ingredients, set aside. Mix second section (minus nuts) of ingredients in separate bowl. Pour into dry ingredients and stir until well mixed. Add water a teaspoon at a time to achieve desired consistency (only needed if your fruit isn't juicy enough). Add nuts.
  3. Spray a bread pan with nonstick baking spray. Pour mixture into pan.
  4. Bake for 1 hr (45min if using convection). Check 10min before done with a toothpick. If it comes out clean, bread is done.
  5. Remove from oven and let cool in pan for 10 min before removing from pan.
