Railroad Cornbread Pie
- 1 lb. ground beef
- 1 large onion, chopped
- 1 can tomato soup
- 2 c. water
- 1 tsp. chili powder
- 1/2 c. green peppers
- 1 c. whole kernel corn
- 3/4 c. cornmeal
- 1 Tbsp. sugar
- 1 Tbsp. oil
- 1 Tbsp. flour (self-rising)
- 1/2 c. milk or buttermilk (if desired)
- 1/2 tsp. salt
- 1 egg
- 1 1/2 tsp. baking powder
- Brown beef and onion; drain and return to pan.
- Add soup, water, corn, pepper and seasoning; mix well. Simmer for 15 minutes.
- Put in baking dish.
- In another bowl, combine cornmeal, sugar, flour, salt, baking powder, egg, milk and oil; mix well and pour onto mixture.
- Preheat oven to 350u0b0 and bake for 20 minutes.
