Cheesy Rice & Chicken
- 6 boneless chicken breasts
- 1 cup chopped mushrooms
- 1.5 yellow apple chopped
- 1.5 cup long grain rice
- 1/2 cup grated cheddar cheese
- 1/2 cup monterey jack cheese
- ** You can use any cheese you like
- 2 tbsp vegetable oil
- 1/4 cup chopped green onion/scallions.
- 2 tbsp chopped garlic
- 2 cup water
- 1 chicken bouillon cube
- In large pan ( dutcvh oven)
- over med. heat veg oil, mix in rice,green onions and garlic.
- Sautee ingreidents until rice is lightly browned
- pour in mushrooms and cook for about 6-7 minutes.
- add 2 cups water and bouillon cube and stir to mix all together.
- Add chicken breast whole or you can cut into strips, cover and simmer for about 20 -30 minutes on low heat - after about 30 minutes chicken should be cooked thoroughly - add cheese and stir to completely mix in.
- let simmer on low for about 10 more minutes, remove from heat and serve
