Super Simple Summer Salad

  1. Drain all the fruits of their water, juices or syrups, if any.
  2. Thoroughly toss the pineapple, tropical fruit and cherries (and any other fruit you'd like) in a large bowl. Gently blend in the mandarin oranges last. Drain the whole mixture again making sure to get rid of any remaining water, juices or syrups.
  3. In your blender or in another bowl, blend the heavy whipping cream and sweetened condensed milk together on low until thoroughly mixed, then liquefy or whip it on high until the mixture becomes thick (about as thick as pudding but lighter). This cream mix is heavier than whip cream but is very sweet. No additional sweetener is needed.
  4. Gently spoon the cream mix into the fruit while stirring. Lime juice gives the salad a little kick. Sprinkle mini-mallows over the top. Serve chilled. Enjoy!
