Jalapeno Alfredo Chicken
- 1lb Rotini or Ziti
- Chicken:
- 1lb boneless chicke brest cut into 1/2 inch pieces
- 2tbsp butter
- 2 cloves minced garlic
- 1/4tsp each chili powder, cayenne pepper, crushed red pepper and black pepper
- Sauce:
- 4tbsp butter
- 2 cloves minced garlic
- 1/3 cup flour
- 1tbsp salt
- 1/4tsp each chili powder, cayenne pepper, crushed red pepper and black pepper
- 2 cups milk
- 1 cup half & half
- 3/4 cup grated cheese
- 8oz shredded colby jack cheese
- 3 jalapeno peppers sliced
- Melt 2 tbsp butter in a large skillet over med heat. Add garlic, spices and chicken. Cook until chicken is no longer pink. Remove from skillet, set aside.
- Cook Pasta until done and drain.
- Over med heat. Melt 4tbsp butter in skillet. Add garlic and spices. Stir in flour a little at a time. Slowly pour in milk and half & half stirring until creamy. Add cheeses and stir until melted. Mix in peppers and chicken. Add to pasta.
