Neille'S Famous Broiler Scallops, With Salad
- 1 lb scallops
- 1/4 cup olive oil
- 1 tsp marjoram
- salt
- pepper
- butter
- 1 tbs mustard
- 1/4 cup balsamic vinegar
- 1 large garlic clove, pressed
- 1 tbs sugar
- salt pepper
- 1/3 cup olive oil
- salad greens
- Put ridge pan in broiler. Turn broiler on high for 15 minutes.
- Marinate scallops in olive oil, salt and pepper.
- When pan is super hot, take out and rub butter over the ridges. Place scallops on pan and quickly put in broiler for 3 minutes. Turn scallops over, cook for 3 more minutes.
- Do not overcook!
- Mix vinaigrette, starting with mustard, vinegar, garlic and sugar first. Then add olive oil in a steady stream while continuing to mix. Add salt and pepper to taste.
- Serve scallops over salad with vinaigrette on top or on the side.
- Serve with sauce from pan and lemon.
