With Grilled Vegetables And Fresh Plum Tomatos
- 3 tbl bertolli olive oil 2loves garlic 2onions chopped
- 3 lbs chopped plum or sicilian tomatoes,some seeds squeezed out
- 3 cups chopped basil
- 1 tsp sage
- 1 small hot pepper,chopped
- 1/4 cup red wine
- B.B.Q.
- slice all vegetables
- zuccini,squash (green & yellow) eggplant,peppers,asparagus,mushrooms (portabello)but any large
- sprinkle all with lemon olive oil,salt & pepper and garlic powder.
- cook pasta in large pot till aldente. In large sautee pan add olive oil,when hot add onions,sautee till soft,add chopped tomatoes & basil and hot pepper and sage.
- Simmer for about 1/2 hour. In the meantime on a hot grill, grill all vegetables in a basket for a few minutes. take off grill and chop. Serve separately in a bowl with grating cheese along with the pasta and tomatoes
