Wozzle'S Sugar And Spiced Pecans
- 1 pound pecan halves
- 1 cup vanilla sugar
- 1 tsp salt
- 1 tbsp ground cinnamon
- 1 tbsp ground allspice
- 1 tbsp ground cardamom
- 1 tbsp ground coriander seed
- 1/2 tbsp ground cloves
- 1/2 tsp freshly grated nutmeg
- 1/2 tsp freshly ground black pepper
- 2 egg whites, lightly beaten
- 2 tbsp butter
- Preheat oven to 250 degrees. Cover baking pan with foil. Melt butter in a large bowl and add beaten egg whites. Whisk briefly to combine. Add pecans and stir to coat all the nuts with the butter-egg white mixture. Combine sugar, salt, spices and pepper in a large, sealable plastic bag and shake thoroughly to distribute spices throughout the sugar. Add pecans and shake again to coat. Pour out onto baking pan and spread as evenly as possible. Bake for 60 minutes, stirring gently every 20 minutes until done. Cool completely on baking pan and then store in an airtight container.
