Grilled Mayan Spiced Salmon With Pineapple
- 1/4 C sugar
- 1 tsp. dry mustard
- 1/4 tsp. cinnamon
- 1 T paprika
- 2 tsp. cocoa
- 1/4 C chili powder
- 1 T ground cumin
- 2 tsp. black pepper
- 1 1/2 T salt
- 4 (6-ounce) salmon filets
- 2 T Olive oil
- 1 pineapple, peeled and cut into 1 inch rings
- Prepare spice mixture by combining all dry ingredients. Drizzle oil evenly over both sides of salmon. Leave skin intact (it holds in moisture)and season other side with spice mixture liberally.Place in grill basket and put on peheated grill with pineapple slices. Grill salmon spice side up for about 5 minutes and flip.Turn pineapple 45 degrees to get nice grill marks on both sides. Grill salmon skin side up for about 3 to 4 minutes until fish begins to flake or to desired doneness.
