Harvest Vegetable Casserole
- 1 (16 oz.) pkg. frozen mixed vegetables (broccoli, cauliflower and carrots)
- 1 c. onion, chopped
- 1/2 c. butter, melted
- 1 tsp. salt
- 1/2 tsp. black pepper
- 8 oz. dairy sour cream
- 1 can cream of celery soup
- 1 1/2 c. Cheddar cheese, shredded
- 1 pkg. (cylinder) Ritz crackers
- Place defrosted vegetables in a 9 x 12-inch dish.
- Saute onion in 1/4 cup butter with salt and pepper.
- Pour onion and butter over vegetables.
- In saucepan, combine soup, sour cream and cheese.
- Stir until cheese melts and is well blended.
- Pour sauce over vegetables.
- Evenly sprinkle crushed crackers over vegetables and pour remaining 1/4 cup butter over top.
- Bake at 350u0b0 for 35 minutes or until golden brown.
