Harvest Vegetable Casserole

  1. Place defrosted vegetables in a 9 x 12-inch dish.
  2. Saute onion in 1/4 cup butter with salt and pepper.
  3. Pour onion and butter over vegetables.
  4. In saucepan, combine soup, sour cream and cheese.
  5. Stir until cheese melts and is well blended.
  6. Pour sauce over vegetables.
  7. Evenly sprinkle crushed crackers over vegetables and pour remaining 1/4 cup butter over top.
  8. Bake at 350u0b0 for 35 minutes or until golden brown.
