Mommy'S Chili
- 2 lbs of lean ground beef
- 3 cans of red kidney beans, drained
- 3 cans of light red kidney beans, drained
- 1 large onion
- 1 large green pepper
- 1 large jar of your favorite red sauce
- 1 can of tomato paste
- 2 cans of diced tomatoes
- chili powder
- 1 tbsp salt
- 1 tbsp pepper
- 3-4 minced garlic cloves
- 2 tbsp onion powder
- 2+ cups water
- 2 pinches red pepper flake
- Add drained beans, sauce, tomato paste, tomatoes, and 2 cups of water to a large pot. Stir on medium heat. In a saute pan pan cook the ground beef adding salt and pepper to taste. When beef is done pour into a strainer. Add to pot of beans and sauce. Stir in garlic, chopped green pepper, and onion. If mixture is too thick add more water. Now add red pepper flake, onion powder, salt, and pepper. Last is the chili powder. I never measure mine I always add to taste. So add as much or as little as you prefer. Simmer on low for 4-5 hours. You will need to continue to add water through out this process when the mixture starts to over thicken. I usually keep a glass of water next to the stove and add a little when needed.
