Adobo-Rubbed Pork Tenderloin With Black Bean Pico De Gallo

- 24 oz pork tenderloin, trimmed, cur into 4 oz pieces
- 6 Tbs paprika
- 2 Tbs ground black pepper
- 2 Tbs coarse salt
- 1 Tbs chile powder
- 3 pinches cayenne pepper
- 1/2 C arugula, loosley packed
- Pico de Gallo
- 2 C black beans, cooked
- 4 med Onions, diced
- 1/2 C Red onion, diced
- 1/2 C Green onion, chopped
- 1/2 C Cilantro, chopped
- 2 Tbs Jalapeno pepper, minced
- 2 Tbs fresh Lemon juice
- 1/4 Tsp salt
- 1 Tbs Chile Powder
- For Pork: Preheat oven to 350 F.. In small bowl, mix paprika, salt, pepper, chili powder, brown sugar, and cayenne. Rub both sides of tenderloin pieces with spice mixture. Pan sear pieces in oven safe skillet until golden brown on both sides. Transfer to oven until done ( 6 - 8 minutes for each 1 inch of thickness ).
- For Pico de Gallo: Mix all ingredients. Serve 1/2 C over each tenderloin piece and garnish with Arugula.
