Chickpea Patties
- 1/8 C olive oil
- 1/2 medium red onion minced
- 2 garlic cloves minced
- 1 jalapeno minced
- 2 t. curry powder
- 1 t. cumin powder
- 1 15 ounce can of chickpeas drained
- 1/4 c. chickpea flour
- 1/2 c. breadcrumbs
- 1/2 c. cilantro
- 3 scallions, minced
- Juice of 2 limes
- Salt to taste
- Saute onion, garlic, jalapeno curry and cumin until tender. Pulse mixture in food processor.
- Add chickpeas and other ingredients and continue to process for 20 seconds until coarse paste forms. Form patties and lightly dust with chickpea flour.
- Fry patties in olive oil for 4 minutes each side on medium heat.
- Finish the patties on a parchment paper lined baking sheet in oven for 10 minutes at 375 degrees.
