Carrot Cake

  1. 325F. Grease either 3 9"cake pans or 1 13x9x2. Line with wax paper and
  2. butter. Beat oil with sugars and add 1 egg at a time. Add buttermilk and
  3. orange zest. Sift dry ingredients and add to egg mixture. Add carrots,
  4. apple and nuts. bake about 55 mins.
  5. Frosting:
  6. Beat cream cheese
  7. with butter in bowl. Add orange peel. Add sugar and beat until
  8. smooth.
  9. Note: Half the frosting is enough to top the rectangle. May
  10. need more icing sugar for proper
  11. consistency.
