Carrot Cake
- 1 c sugar
- 1 c brown sugar
- 1 c oil
- 1/2 c buttermilk
- 2 c flour
- 2 ts baking powder
- 2 ts baking soda
- 1 ts salt
- 1 ts cinnamon
- 1/2 ts nutmeg
- 1/2 ts ginger
- 3 c grated carrot
- 1 c grated apple
- 1/2 c pecans chopped
- 1 tb grated orange peel
- 4 la eggs
- 2 8 cream cheese
- 1 st butter (unsalted)
- 2 ts vanilla extract
- 1 ts orange extract
- 2 ts grated orange peel
- 4-5 c powdered sugar
- 325F. Grease either 3 9"cake pans or 1 13x9x2. Line with wax paper and
- butter. Beat oil with sugars and add 1 egg at a time. Add buttermilk and
- orange zest. Sift dry ingredients and add to egg mixture. Add carrots,
- apple and nuts. bake about 55 mins.
- Frosting:
- Beat cream cheese
- with butter in bowl. Add orange peel. Add sugar and beat until
- smooth.
- Note: Half the frosting is enough to top the rectangle. May
- need more icing sugar for proper
- consistency.
