Mediterranean Tuna Salad

  1. 1. In two shallow bowls, lay mixed greens, such as spring mix, spinach and/or romaine lettuce mixed with radichio and 1 small tomato cut into wedges in each bowl.
  2. 2. Drain a 6 oz can of tuna packed in water and spread on top of the greens in each bowl.
  3. 3. Pour two tbls of extra virgin olive oil along with one tbls of basalmic vinegar in each bowl.
  4. 4. Top with 1 oz of cubed provelone or feta cheese and 1 oz of red roasted peppers in each bowl.
  5. 5. Sprinkle with seasoned garlic salt and oregano.
