Mediterranean Tuna Salad
- six cups of salad mix
- one small tomato cut into wedges
- two six oz. can of tuna packed in water
- four tlbs extra virgin olive oil
- two tlbs basalmic vinegar
- two oz. cubed provelone cheese or feta cheese (optional)
- two oz. red roasted peppers
- 1/4 tsp seasoned garlic salt
- 1/2 tsp dried oregano
- 1. In two shallow bowls, lay mixed greens, such as spring mix, spinach and/or romaine lettuce mixed with radichio and 1 small tomato cut into wedges in each bowl.
- 2. Drain a 6 oz can of tuna packed in water and spread on top of the greens in each bowl.
- 3. Pour two tbls of extra virgin olive oil along with one tbls of basalmic vinegar in each bowl.
- 4. Top with 1 oz of cubed provelone or feta cheese and 1 oz of red roasted peppers in each bowl.
- 5. Sprinkle with seasoned garlic salt and oregano.
