Banana Macadamia Nut Bread
- 2 c. all-purpose flour
- 3/4 c. sugar
- 1/2 c. butter, softened
- 2 eggs
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. grated orange peel
- 1 tsp. vanilla
- 1 c. ripe bananas
- 1/4 c. orange juice
- 1 c. flaked coconut
- 3 1/2 oz. Macadamia nuts, chopped, or 3/4 c. walnuts, chopped
- In a large mixing bowl, combine flour, sugar, butter, eggs, baking soda, salt and orange peel.
- Beat at low speed until well mixed.
- Add bananas and orange juice.
- Continue beating about 1 minute, well mixed.
- Stir in coconut and nuts (batter will be thick).
- Spread into 1 greased 9 x 5-inch loaf pan.
- Bake about 35 to 45 minutes or until wooden toothpick comes out clean.
- Cool. Bake at 350u0b0.
