Almond Oatmeal Breakfast Bars Recipe
- 1 cup rolled oats (uncooked)
- 1/4 c chopped almonds
- 2/3 cup nonfat dry milk
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 dash ground allspice
- 1/4 cup raisins
- 1 cup unsweetened applesauce
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 3/4 teaspoon almond extract
- Preheat oven to 350F.
- Spray an 8-inch square baking pan with nonstick cooking spray.
- In a large bowl, combine oats, almonds, dry milk, baking powder, baking soda and spices. Mix well. Stir in raisins.
- In a small bowl, combine remaining ingredients, mixing well. Add to dry mixture, mixing until all ingredients are moistened. Spoon into prepared pan. Smooth the top with the back of a spoon.
- Bake 30 minutes, until lightly browned. Be careful not to overcook.
- Cool in pan on a wire rack. Cut into bars.
