Nectarine Pie
- Crust
- 1/3 c. butter
- 1/3 c. shortening/crisco - creamed together
- 1 t lemon peel (Plus 1/2 t for cream cheese layer)
- 1/3 cup powdered sugar
- 1 1/2 c. flour - sift powdered sugar and flour together
- 1/2 t. salt (optional)
- 1/4 t. nutmeg (or mace)
- Topping
- 1 pk 8oz cream cheese
- 2T sugar
- 1 t vanilla
- 1/2 t grated lemon peel
- 1/4 c sour cream (or whipping cream)
- fruit
- 4 nectarines + rasberries or blueberries and/or strawberries, etc.
- glaze
- 1/2 cup cassis (or cherry flavored liquor)
- 2 t. corn starch
- Bake crust in 325 degree oven (or 300 degree oven if black pan) for 20-30 min.
- Cool before filling
- For Topping soften cream cheese and beat smooth. Beat in sugar, sour cream, lemon peel and vanilla. Spread over cooled crust.
- Blend together glaze ingredients and cook in microwave for about 2 minutes, stirring after 1 minute, then each 15 - 20 seconds until thick. Cool 5 minutes.
- Slice fruit and arrange on cream layer.
- Spoon sauce over fruit.
