Lovely Raspberry Jam Cake
- 3 eggs
- 1 and 1/2 cups of sugar
- 4 tablespoons of butter
- 3 cups of all-purpose flour
- 1 tablespoon of baking powder
- 11 oz. of raspberry jam
- First of all: prepare a pan in which our cake will be baked. Choose one with 15 cm x 30 cm. Grease it with butter and powder also with a little bit of all-purpose flour {one tablespoon is enough}. Or, as I did, line it with parchment paper. Preheat oven to 325 degrees F.
- Put the eggs, the sugar and the butter into the blender bowl and beat until all is turned into a cream.
- Then, drop that mixture in a large bowl, in which it will be mixtured {gently} to the all-purpose flour and to the jam. So, you can add up the baking powder and, again, stir gently.
- Take the mixture and drop it on the pan and bake it for 25 to 30 minutes. Or until you could stick a fork and that came clean. ATENTION: do not open up the oven before 20 minutes of baking, ok?
- I decided to add a little twist: cream cheese frosting! It gets even more delicious. You should try it!
