Bread And Circus Rice
- 2 c. uncooked brown rice
- 1 c. cashews (unsalted)
- 1 c. red pepper, chopped
- 1 c. raisins, soaked in water for 20 minutes
- 1 c. celery, chopped
- 1 bunch parsley, chopped
- 1/3 c. teriyaki or soy sauce
- 1 c. dried apricots, soaked in water for 20 minutes, then chopped
- 1/3 c. olive oil
- 1 tsp. dry mustard
- 1 Tbsp. curry (I use mild)
- 1 bunch scallions, chopped
- 1 Tbsp. nutmeg
- dash of cinnamon
- Cook rice according to instructions.
- Cool.
- In large bowl, place cooled rice.
- Pour teriyaki over rice.
- Toss lightly.
- Add cashews, red peppers, raisins, scallions, apricots, celery and parsley; toss lightly.
- In a small saucepan, heat oil.
- Add dry mustard, curry, nutmeg and cinnamon.
- Whisk until blended.
- Cool. Whisk again and pour over ingredients in bowl.
- Toss lightly; cool and enjoy.
