Sausage Alfresco
- 1 pkg. Hillshire Farm sausage or Polska kielbasa
- 8 oz. uncooked fettuccine
- 1/4 c. butter
- 1/4 c. chopped onion
- 1 minced garlic clove
- 1 c. mixed carrots, zucchini, red pepper
- 1/2 c. frozen peas
- 1 c. heavy cream
- 2 Tbsp. chopped parsley
- 6 Tbsp. grated Parmesan cheese
- salt and pepper to taste
- Cook fettuccini and keep warm.
- Saute garlic and onion in large skillet with butter until tender.
- Add vegetables and cook until done (5 minutes).
- Set aside.
- Brown sausage and drain on paper towels.
- Combine sausage, vegetables and cream.
- Heat through, but do not boil.
- Stir in parsley, cheese, salt and pepper.
- Serve over fettuccine.
- Sprinkle with extra cheese if desired.
