Crab Cakes With Horseradish Sauce
- 1 lb fresh lump crab meat
- 1/4 c dry bread crumbs
- 3 green onions, chopped
- 1/4 c chopped parsley
- 1/4 t salt
- 1/4 t cayenne pepper
- 1/4 t pepper
- 1/4 to 1/2 c mayonnaise
- Bread crumbs for coating
- 2-3 T olive oil
- Horseradish sauce
- 1/2 c sour cream
- 1/4 c mayonnaise
- 2 T horseradish
- Combine ingredients through pepper in a bowl and mix well. Add 1/4 c mayonnaise, or enough to bind, and mix well. Shape into 6-8 patties. Coat with additional bread crumbs. Fry in heated oil in nonstick skillet over medium heat for 2-3 minutes on each side or golden brown. Drain on paper towels and serve with Horseradish Sauce.
- Sauce: Combine ingredients in a bowl. Chill until ready to serve.
