Arugula Salad (Rucola E Parmigiana)
- FOR VINAIGRETTE:
- 2 tbsp red wine vinegar
- Kosher salt & pepper
- Dried Oregano
- 1 tsp chopped fresh basil
- 1/2 tsp finely chopped garlic
- 6 tbsp extra virgin olive oil
- FOR SALAD:
- 2 bunches arugula leaves, washed and drained
- 4 radishes, washed, ends trimmed and sliced thin
- 1/2 c shaved parmesan cheese
- 1/4 c toasted pinenuts
- 1) In a mixing bowl, wisk together all the vinaigrette ingredients except the olive oil. Slowly pour in the olive oil while whisking until it is fully incorporated.
- 2) Add the arugula and radishes to a salad bowl and toss well with enough vinaigrette to coat evenly.
- Variation: Goat cheese & hazelnuts.
