Arugula Salad (Rucola E Parmigiana)

  1. 1) In a mixing bowl, wisk together all the vinaigrette ingredients except the olive oil. Slowly pour in the olive oil while whisking until it is fully incorporated.
  2. 2) Add the arugula and radishes to a salad bowl and toss well with enough vinaigrette to coat evenly.
  3. Variation: Goat cheese & hazelnuts.
