Spicy Pineapple-Glazed Salmon

  1. Melt butter in small saucepan. Add shallots and cook over low heat for 3 minutes. Add brown sugar. Cook and stir until sugar is melted, about 3 minutes. Slowly add pineapple juice and crushed red pepper, stirring until blended. Cook over medium low heat until reduced by 1/2. Set aside to cool.
  2. Place salmon filets in ovenproof pan coated with cooking spray and brush with glaze. Refrigerate filets for 30 minutes.
  3. Preheat oven to 400 degrees.
  4. Bake salmon for 12 minutes and remove from oven. Preheat broiler. Brush salmon with glaze and broil 3 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges.
