Spicy Pineapple-Glazed Salmon
- 2 T. chopped shallot
- 2 T. butter
- 2 T. brown sugar
- 1/2 c. pineapple juice
- 1/4-1/2 t. crushed red pepper
- 4 (6 oz.) salmon filets
- Melt butter in small saucepan. Add shallots and cook over low heat for 3 minutes. Add brown sugar. Cook and stir until sugar is melted, about 3 minutes. Slowly add pineapple juice and crushed red pepper, stirring until blended. Cook over medium low heat until reduced by 1/2. Set aside to cool.
- Place salmon filets in ovenproof pan coated with cooking spray and brush with glaze. Refrigerate filets for 30 minutes.
- Preheat oven to 400 degrees.
- Bake salmon for 12 minutes and remove from oven. Preheat broiler. Brush salmon with glaze and broil 3 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges.
