Chicken Breasts With Portobello And Mozarella

  1. Set the oven to 180u0b0C (350u0b0F).
  2. Mix the flour, pepper and salt in a bowl. Roll the chicken breasts in the flour, covering them in flour.
  3. Heat the oil in a pan and add the breasts, fry them for about 8 minutes on each side until golden brown. Remove from heat and put to the side.
  4. Slice the Portobello mushrooms and chop the garlic cloves. Melt the butter on a hot pan and fry the portobello slices along with the garlic for about 2-3 minutes.
  5. Place the portobello slices on top of the chicken breasts and put into the oven for 5 minutes. Meanwhile slice the ball of fresh Mozarella.
  6. Take the chicken breasts out of the oven, place the mozarella slices on top of the portobello slices on the breasts. Put back into the oven and bake until the cheese has melted.
  7. Serve for example with Mushroom Risotto and Ruccola salad with some extra virgin olive oil... and of course with some italian red wine!
