Best Low Fat Banana Bread Ever
- 1 tbsp. vegetable oil
- 1/2 cup sugar
- rind of 1/2 a lemon, finely chopped
- juice of 1 lemon
- 3 bananas, mashed
- 2 eggs
- 1/3 cup low fat vanilla yogurt
- 1 3/4 cup whole wheat flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tbsp. cinammon
- 1 cup walnuts, coarsely chopped
- Preheat oven to 325.
- Beat together oil, sugar and lemon rind. Add lemon juice, bananas, eggs and yogurt.
- In a separate container stir together all dry ingredients (except walnuts). Add dry ingredients to the banana mixture and stir until just combined. Do not overbeat. Gently fold in walnuts.
- Bake for 1 hour, or until tester inserted into center comes out clean.
