Best Low Fat Banana Bread Ever

  1. Preheat oven to 325.
  2. Beat together oil, sugar and lemon rind. Add lemon juice, bananas, eggs and yogurt.
  3. In a separate container stir together all dry ingredients (except walnuts). Add dry ingredients to the banana mixture and stir until just combined. Do not overbeat. Gently fold in walnuts.
  4. Bake for 1 hour, or until tester inserted into center comes out clean.
