Grilled Red Pepper And Tomato Soup
- 8 ~ Ripe Roma Tomatoes - whole
- 6 ~ Garlic Cloves - peeled
- 1 ~ Yellow Onion - Extra Large one -cut into wedges
- 1 ~ Red Bell Pepper - cut in half and seeds removed
- 12 ~ Sundried Tomatoes -not in oil
- 2 ~ Carrots - large & unpeeled
- Sea salt
- Fresh ground pepper
- Garlic olive oil - I used Door County Oilere brand
- 3 ~ Fresh Basil leaves
- 1~ 16.9 0z bottle of Organic Biotta Carrot Juice
- Ingredients for one sandwich:
- 2 ~ Pieces of Whole Wheat Bread
- 1 T. Kerrygold ~ Imported Garlic & Herb butter
- 1 ~ slice of Fontina Cheese
- 1 ~ slice of Havarti Cheese
- 1 ~ T. Honey
- 1 ~ Fresh Basil leaf
- 1. Preheat grill to 400.
- 2. Add olive oil to case iron skillet along with all the whole Tomatoes, whole garlic cloves,and half of onion wedges.
- 3. Place other half of onion right on grill rack.
- 4. drizzle whole tomatoes with olive oil, sea salt, and fresh ground pepper.
- 5. Put carrots and peppers on higher grill shelf.
- 6. grill until all vegtables are fire roasted and tomatoes are falling apart.
- 7. Add all grilled ingredients and sundried tomatoes to cast iron skillet.
- 8. Simmer on grill until all items are tender.
- 9. Pour all ingredients carefully into a very large mixing bowl.
- 10. Buz carefully with hand held emergent blender until desired texture is made.
- 11. Pour into soup pot on stovetop.
- 12. Add Biotta Carrot Juice and stir.
- 13. Enjoy with grilled cheese sandwich!
- Directions below:
- 1. Butter one side of each piece of bread.
- 2.place one buttered side piece of bread in a clean skillet on low heat.
- 3. Place one piece of cheese on bread in skillet.
- 4. drizzle with honey.
- 5. Place basil on top of honey.
- 6. place next piece of cheese on.
- 7. top with last piece of buttered bread- buttered side up.
- 8. Grill on low - medium heat until cheeses are melted and bread is golden brown.
- 9. Enjoy!
