Machoo Bake
- -2 lbs Catfish(can also use Rockfish or Tilapia. I use catfish but you can experiment with the type of fish)
- -1/4 cup yogurt
- -2 tablespoons Teriyaki sauce
- -1 tsp salt
- -1 tbsp Ginger Powder
- -1 tbsp Garlic Powder
- -1 tbsp Onion Powder
- -1 small Onion, sliced
- -1/2 Tomatoe sliced
- -handful chopped cilantro
- -2 fresh garlic cloves sliced
- -1in(long and wide) fresh ginger peeled, sliced
- -Clean and pat dry fish
- - Marinate fish with teriyaki sauce, onion poweder, ginger poweder, garlic powder, turmeric, salt and yogurt. Put in baking dish. Cover with aluminum foil. Put in refigerator.
- - Marinate over night for best results. If you are pressed for time, marinate for 1 hour.
- -Bake fish, with aluminum foil on, for 20 minutes.
- -while the fish is baking, saute fresh onions, fresh garlic and fresh ginger on stove top in 1 tbsp olive oil
- -After fish has been throuroughly cooked, remove the aluminum foil, and lay the sauted onions, ginger, garlic and tomatoe on top of the fish. Do not put aluminum foil back on!
- -Broil for 10-15 minutes. You want to burn the fish on the top a little.
- -Remove and add cilantro.
