Marsala Tortellini With Mushrooms
- 2 - 8oz Package bertoli tortellini - any flavor of your choice
- 2 - tablespoons olive oil
- 2 - tablespoons butter
- 2 - medium size onions - sliced thin
- 4 - cloves garlic chopped fine
- 2- 8oz. packages white button mushrooms sliced thin
- 2 - cups whipping creme
- 1 - cup marsala wine
- 2 - cups chopped artichoke hearts
- 1 - teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 - teaspoon salt
- Prepare tortellini as directed on package. Drain with collander and set aside.
- In a large skillet, heat olive oil over medium heat. Add butter. When butter melts, add sliced onions. When have caramelized about 10 minutes, add sliced mushrooms. Cook until mushrooms have soften about 7 minutes. Add garlic and saute' just a few minutes. Add marsala wine and cook down wine until it's reduced down in half. Add whipping creme, salt, cayenne and black pepper. Cook until creme starts to thicken about 7 minutes. Add tortellini and artichoke hearts cook until heated through. Taste for salt & pepper, add if necessary.
